Natural Looking Color in Every Slice
Coloration in bakery products is critically important not just for visual appeal but also for consumer perception of freshness, quality, and taste. Color signals doneness, richness, and flavor (e.g., golden brown crust = fresh-baked, buttery taste). Bright or warm tones can suggest sweetness (for cakes, muffins) or healthfulness (for wholegrain or plant-based options).
Bakery items undergo high-temperature processing (baking, toasting), so colorants must be thermally stable. Carotenoids (like beta-carotene or lutein) are ideal due to their resistance to heat and natural golden tones.
